One of Japanese national cuisine is "Okonomiyaki".
The basic material of Okonomiyaki is batter, after adding the ingredients such as vegetables, meat and seafood, cooked on the iron plate, and seasoned with sauces, mayonnaise, aonori, then can be served immediately.
Its cooking methods and materials are varied from place to place.
Among them, there are two representative types, the "Kansai-style Okonomiyaki (Osaka Okonomiyaki)" and "Hiroshima style Okonomiyaki (Hiroshima Okonomiyaki)".
The difference between Osaka Okonomiyaki and Hiroshima Okonomiyaki is whether it is "Mixed-Okonomiyaki" or "ladled-Okonomiyaki".
The Kansai-style Okonomiyaki is fried by batter mixed with materials; but the cooking method of Hiroshima-style Okonomiyaki is to fry the batter into thin pancake, and then set the ingredients on it.
Speak of "pasta", people will easily think of Kansai, but the Hiroshima Okonomiyaki is actually not inferior at all.
One of Kansai-style Okonomiyaki is Hyundai-style, but it is different from the Hiroshima Okonomiyaki.
The Hyundai-style is cooked with coarse noodles, but Hiroshima Okonomiyaki is cooked with fine noodles. According to personal preference, someone like to add udon noodles.
① Spread out the batter on the iron plate like French Crepes
② When the batter is fried well, fully covered with cabbage silk, bean sprouts, and cuttlefish tempura （this is the POINT！）for grilling
③ Next step, put the strips of pork on cuttlefish tempura, and sprinkle a small amount of batter
④ Fry soba noodles in the margin of iron plate（the soba noodles shall be fine！POINT）
⑤ Turn the ③ over
⑥ Put ⑤ on the fried soba noodles
⑦ Fry eggs on the iron plate
⑧ Cover the eggs with ⑥, sprinkle sauces, mayonnaise, aonori! The sauce shall be Otafuku Sauce
Otafuku Sauce are used in most of Hiroshima Okonomiyaki
The toppings in the last step are also highly recommended! My favorite is onion & cheese, oysters and mochi as well.
