Nihonshu atsukan izakaya liqueur rice Tobikirikan Jyoukan Nurukan

What is "atsukan"?
"Atsukan" refers to the nihonshu from 50 to 55 degrees. Nihonshu has different names depending on the temperature at which it is heated. From 35 to 40 degrees, it shall be called "Hitohadakan", from 40 to 45 degrees, it shall be called "Nurukan", then from 45 to 50, called "Jyoukan", and from 55 to 60, called "Tobikirikan". No matter which kind of it is, they shall be the expression only for the nihonshu.

In Japanese, expressions such as "hot wine" and "Atsukan of Shaoxing wine" are not right.

"冷や / 冷や酒(Hiya / Hiyazake)" means the nihonshu at normal temperture,
"冷酒(Reishu)" refers to the cold nihonshu that has been iced,
while "熱燗(Atsukan)" refers to the heated nihonshu.
So if you order nihonshu of "Hiya", you should have known that it is not the cold nihonshu! Even Japanese themselves order, they may occasionally make a mistake.
